Elk (Wapiti)
North American Elk are also know as Wapiti, a name given them by the Shawnee
Native Americans. Elk are significantly larger than their New Zealand red deer
cousins,
but possess similarly flavorful and tender meat. Pure strains of elk are being
farm-raised in New Zealand and on some ranches in the United States.
A point of information: Venison which is
commonly thought of as deer, is a term that is broadly used to
include the meat from elk, moose, reindeer, caribou, &
antelope.
