La Truffiere Infused Oils
La Truffiere infused oils are produced in Tuscany, the very heart of Italy.
The process of infusion is centuries old. The extra-virgin olive oil
(cold-pressed, without chemicals) is infused with various ingredients (white
truffle, porcini, basil leaves...) during 8 weeks, and kept in wood containers
at room temperature. No heat is ever used during the process (which would
speed up the infusion, but would also release undesirable waxes and acids).
In the end, the flavored oil is filtered in order to get rid of the
sediments.
Because it's Extra-Virgin olive oil, La Truffiere should only be used as a
flavoring (not a cooking oil). Just add a few drops before serving a warm
dish, or use it to enhance a salad dressing.
