    Innovation

    There is no limit to what can be done.  Made with essential oils extracted from the various natural ingredients, the CASTELMURO oils are high quality products.  They have been designed not only as flavors, but also as cooking tools; they will perfectly pass the test of very high temperature cooking.  they are so versatile that chefs will be able to use them in all their recipes (whether cold or warm), just like any other ingredient.

    • Mint Oil: use it the British way for a "mint sauce", or a fresh salad dressing.
    • Oregano Oil: ideal with pasta, poultry, game, seafood or even for a barbecue.  You can also add it to tomato sauce.
    • Saffron Oil: ideal for paella, pasta; and to stir-fry seafood.
    • Cilantro Oil: use to stir-fry poultry, pork, fish or vegetables.  Add to tomato sauce for great pasta.

    La Truffiere Infused Oils

    La Truffiere infused oils are produced in Tuscany, the very heart of Italy.  The process of infusion is centuries old. The extra-virgin olive oil (cold-pressed, without chemicals) is infused with various ingredients (white truffle, porcini, basil leaves...) during 8 weeks, and kept in wood containers at room temperature.  No heat is ever used during the process (which would speed up the infusion, but would also release undesirable waxes and acids).  In the end, the flavored oil is filtered in order to get rid of the sediments.

    Because it's Extra-Virgin olive oil, La Truffiere should only be used as a flavoring (not a cooking oil).  Just add a few drops before serving a warm dish, or use it to enhance a salad dressing.

    "Traditional"

    • White Truffle Oil:  perfect with pasta, salad, or "gourmet" pizza!
    • Basil Oil:  add to pasta, to tomatoes and mozzarella, or pour a few drops over a grilled fish.
    • Lemon Oil:  for a vinaigrette, or a chicken marinade.
    • Porcini Oil:  a must in your wine sauces and your stews.  Great on top of a pasta dish!
    • Red Chili Pepper Oil:  to stir-fry vegetables, or to dip your pizza bread!
    • Garlic oil:  goes with everything!  Literally!  Bruschetta, salads, pasta, stir-fry, garlic bread.
    • Sun Dried Tomato Oil:  add it to your favorite Italian recipes.
    • Black Truffle Oil:  a great addition to a gourmet meal, this oil will give a touch of class to your vinaigrettes and your salad dressings. The powerful aroma of the famous French "Tuber Melanosporum".  Before serving a steak, add a drop of black Truffle Oil on the top of your meat and do with same with fish.  You can also prepare a vinaigrette with olive oil and a little bit of truffle oil.

    "Distinction"
