Saffron
Mostly used in French, Italian and Spanish cooking, Saffron is known as the
world's most expensive spice. Saffron is the dry-roasted flower of the plant,
referred to as the "Rose," which can be harvested only during a one-month
period each year. Just one of the three stigmas in a Saffron flower will
flavor and color a game or fish dish large enough to serve 5 - 6 adults.
